I've always been a cover the bread in cheese and stick it under the grill kind of guy, but today I toasted the bread in the toaster and added a nice mature cheddar at the end. Is this acceptable to not melt your cheese?

2) Toast one side of each slice under the grill
3) Butter non-toasted side
4) Add grated mature cheddar, black pepper, and Worcestershire sauce

You are almost right. The second side should be lightly toasted. Your step 3 would be "butter the lightly toasted side" and so on. |  |
